Since I’m on the topic of freezing I thought I would mention the beauty of freezing your ginger root. I don’t know about you but I always buy more than I need. I used to wrap it up, toss it in my crisper, and forget about it until it was past its prime. That was until I learned that you can freeze it and then grate it while it’s frozen as you need it. I usually peel it first, put it in a little ziplock baggie, and then pop it in the freezer. No more wasted fresh ginger root and I nearly always have some on hand.
