Happy Cinco De Mayo!

Just because Cinco De Mayo is a Mexican holiday it doesn’t mean that the rest of us can’t celebrate. And what better way to celebrate than with a Mexican-inspired feast? Have a taco party. Make some salsas or guacamole.

Personally, I really want to try these Jalpeno Margaritas.

I got this (non-traditional) guacamole recipe from my dad and it’s always a hit at parties…

Chunky Guacamole

2 avocados – chopped

2 green onions – chopped

1 stick of celery – chopped

1 tomato – chopped

½ green pepper – chopped

1 jalapeno pepper – minced

1 clove of garlic – minced

2 Tbsp fresh lemon and/or lime juice

½ tsp of salt

Mix all ingredients together in a medium bowl. Will keep in fridge up to one day covered, with the avocado pits nestled in the guac to prevent discolouration of the avocado. Enjoy with tortilla chips.
