Sticking with the leafy green theme this weekend… I’m on to the bok choy now. The baby variety is one of my all-time favourite leafy green vegetables. One cup of raw bok choy contains only 10 kcal. It’s got 78 mg of calcium, 14 mg of magnesium, 186 mg of potassium, 1983 micrograms of beta carotene, and 33 mg of vitamin C.
Not sure how to prepare bok choy? It works great in stirfries and soups. Canadian Living has a great basic bok choy recipe to get you started. My favourite recipe comes from Mark Bittman and is also really simple. It’s Crisp Tofu with Asian Greens. I like to serve it on a bed of kamut udon noodles. Yum!
