It was nice having my little blogcation. Primarily because I’m running out of ideas for these weekend cooking tips. There are only so many whole foods and little tips to write about. If you have a good tip, or a topic you’d like to see me write about, please let me know!
Today’s tip was inspired by my latke session on New Year’s Day. Now, these latkes were a little bit different from many in that I just dropped the mixture into the pan by the spoonful. However, when making most vegetable fritters, latkes, and veggie burgers, you’ll have much greater success (i.e. they’ll be less likely to fall apart) if you chill your patties before cooking. Place your prepared vegetable patties on a baking sheet and chill in the fridge for at least 30 minutes or the freezer for about 10-20 minutes.
