Apparently it’s National Artichoke Heart Day, and despite being a huge fan, I’ve never blogged about artichokes (nor their hearts) before. So… artichokes…

One half cup of artichoke hearts contains 47 calories, 3.4 grams of fibre, 2.5 grams of protein, 19 mg of calcium, 254 mg of potassium, and 79 mcg of folate.

Artichoke hearts are great chopped-up and added to a salad, as a pizza topping, in pasta sauces, or with other roasted vegetables.
